Method
- Start by adding 3 cups of water into a pot.
- Add in the chopped carrots, cabbage, capsicum, cauliflower, French beans, spinach, and the moong dal. If you want, you can also add some tomatoes to the mix.
- Add salt to taste and give everything a nice mix.
- Cover and cook until everything is perfectly done. Be very careful not to overcook anything, because it will look very mushy.
- At the end, add 1 cup of oats to the pot and mix well. The oats are going to add a lot of fiber to the soup and definitely complete your meal.
- To make a beautiful tadka, heat 1 teaspoon of SAACOOR Cold Pressed Coconut Oil (or ghee) in a pan.
- Add the whole red chili, mustard seeds, cumin seeds, ginger, and garlic, and sauté briefly.
- Pour the tadka on top of the cooked soup and stir it in.
- In perfect Chef Poonam style, finish the soup by adding some pepper on top. Enjoy this soup every day for your dinner without cheating to see the weight loss results!
Chef's Tips
-
Maintain the Texture: It is highly important not to overcook the vegetables; they should be cooked perfectly but not allowed to turn mushy.
-
The Fiber Factor: Adding the oats at the very end ensures the soup is thickened nicely while providing the necessary fiber to make it a complete, satisfying meal.
-
Healthy Tempering: Using a pure, cold-pressed option like SAACOOR Cold Pressed Coconut Oil for your tadka allows the spices to release their maximum aroma without adding heavily processed fats to a weight-loss dish.
